Emoji Switcher works great. You can pick what kind of emoji you want in-app and it will install it for you. I switched from the kit kat emojis to iPhone's on our CM11 port.
I do that all the time with kitkat based roms, But i was talking about adding more to stock rom 4.1.2 becuase i dont like the ones that are already there. id much rather like google or touchwiz emojis.

To add more I would assume they are lodged in a framework-res or the messaging apk I don't use google that much when trying to figure out how to add or remove components I'll look into it and give you a hand
-edit- as i figured the emojis are listen in framework-res.apk decompile that navigate to
drawable-ldpi or what ever yours is. scroll about half way down and vahla you will see em. good luck
