I have no problems with these symbols.
Language (English uk)

Samsung keyboard
Stock messing app with menu settings inputmode set to gsm alphabet

I'm also on GSm
But pound symbol and Euro Symbol just AP paar as a black space. Ie character is invisible so to speak. Dollar symbol appears as normal. Tried to switch to English (us) and back to English (uk) but no change.
 
On further exploration there are other symbols not appearing either (just blank spaces) such as the speach marks, and the division and multiplication symbols
 
Does this happen in all apps or just messaging?

Have you tried a different keyboard (from playstore) - not really a solution I realise.

Try changing your system font in settings>display - you may have a corrupted font file.

You, Sir, are a star. I reset the font, and everything came back. What was even worse was that when I returned to the previous font everything worked again, so it seems the font just got "tired".
