Have a look at ClockworkMod Recovery - there's a specific version for the Defy.

Alternatively you can jump right into 2.3 with the CyanogenMod. This is work in progress, but I'm running the latest beta for daily usage and it works fine (for me).

Be careful though, it's possible to mess up your phone, and you might spend ages trying to get it working again, a bit like me
