Does anyone know if and when android 5.0 will be fully released? I have been looking around, but have found nothing out but that my device will get it.

I'm not looking forward to it. Updates seem to be more bother than their worth.
You can reduce the pain level if you plan to do a periodic update. Every major update (like 4.4.4 to 5.0.n) should be immediately followed by a Factory Data Reset. Nova Launcher Prime allows you to save your settings and restore them, after a Factory Data Reset. Tasker allows you to do the same thing.
So ... transition to using Nova Launcher Prime and Tasker and when it comes time to do the upgrade/Factory Data Reset it is a little unpleasant but not a very big deal.
(This of course assumes you are not into gaming using games that don't allow backup/restore of your progress.)
