Depends on your style of usage.
1. For large notes you can see, edit and do stuff on your PC with as well, use
SpringPad or
Evernote. Use either depending on the way of organizing you want. I put random notes, my movie collection list, notes of/about stuff I want to share, (basically everything I come across along the way and think I'd like to remember, as I like the SpringPad webclipper better than Evernote's) etc in my SpringPad. I use Evernote primarily for school notes and other things I want organized. Mostly they do the same things anyway with only the notebook interface that's differing. They have PC based solutions too. Any edit you make on your notes from one location (your phone/laptop/home PC/work PC) are synced across the account. Evernote only allows offline notes on PC only unless you have a paid account. SpringPad on the other hand is fully free (but their PC solution is a web app/chrome extension). Another option is
CatchNotes (which you can also sync to via
AK Notepad) but I havent used either.
2. For basic note taking,
Droid Notepad allows scribbles/doodles,
ColorNote allows lists and basic notes (each note or list can be placed on the screen as a post-it like widget), while
Extensive Notes and
Classic Notes are two ridiculously full featured note pads. They're very nice and has a LOT of features.
