So, I don't know if anyone else has had this problem to the same extent, but according to every app which uses my location I'm in Ellensburg, Washington but as far as I know, I'm in a tiny village in the north of Scotland. So, what's going on here?

When you have a chance, find an open spot with a good view of the sky, open Maps (or similar) and let the GPS receiver find a good lock. This may take 15-20 minutes if the internal almanac, which holds data about each satellite and aids acquisition, requires updating but usually fixes the issue.

A very useful app is GPS Status & Toolbox, which lets you flush and download A(ssisted)-GPS info over an active data (mobile and/or wifi) connection to increase the speed of location determination. The free version (with ads) does all you need.

1. You have no GPS fix. Basically, the phone can't tell where you are and it shows a random/default location

2. Follow Slug's advice. Turn on all settings for location and use High Accuracy Mode. Ideally use mobile data AFAIK.
