Any Time is Grillin Time

My son came over for a visit and brews Friday and he brought me a pound of ground bison. His boss had been treated to a bison hunt on private land this summer. Not only was he wined and dined and treated to a weekend guided hunt, they had his kill processed. It must be nice to have a job with such perks. Anyway, my son's boss gave him some ground bison and a roast. I'm thinking of a bison / beef smoked meatloaf in my future.
Like Elk, Bison makes a great sausage as well.
 
I'm smoking a meatloaf. I was cleaning and inventorying my freezers and came across a 1lb package of sweet Italian sausage meat, so I'm trying that 1/2 & 1/2 with ground beef. I won't add any other spices, just egg, bread crumbs, and onions, and let the sausage be the flavor.
 
Sounds good. After my inventory, I have to work my reserves down, before I buy a roast though. By my count I have 35+ weekday meals worth of proteins, another ten or so meals with protein supplements, and 6 what I call Sunday suppers (meals that take more then 3 hours to cook) like a rib roast, two porkettas, pork roast, a pork butt, etc.

I have a stock of pork. It keeps going on sale and I keep buying. I have a couple pork shoulders, a few racks of bbacks, a couple pork loins, and a very think ham steak. that have to go before I buy any more pork. Beef I'm not that stocked. I have ten or so pounds of ground beef, two nice ribeyes, a rack of back ribs, and a brisket point. I thought I had a flatiron that I planned to cook today but when I went to thaw it out, I discovered we have eaten the stock I had. I ran to the grocery store this morning and they didn't have any either. They didn't have any chucks that looked decent so I ran to Walmart for today's cook. I have a few packages of chicken thighs and a few of breasts. I'm not in bad shape for meats but I'm normally in better shape. Costco had a good looking whole packer I almost came home with. Paying full price for the brisket turns me off but man it was calling my name.

My local market had some super thick ham steaks for sale today. They were at least an inch and a half thick.. perhaps two. The slices looked like they needed some smoke and then a blackstone sear. LOL. I actually thought about buying one but I have meals of pork waiting for the fire.

My chuck roast looked like it was going to be special. It wasn't special. It tasted great but wasn't nearly as tender as the marbling teased me into thinking. It only had a 45 minute rest but that shouldn't have effected the roast that much. I'll thinly slice the reminder for some bbq beef sandwiches tomorrow. It's not like the roast was lousy. It just wasn't anything to brag about.
 
My meatloaf was OK. I prefer less spices than I got from the sausage meat and more of the flavor of the meats.

I do like twice smoked hams (taking a ham and cooking it on the smoker). I've not tried it with a ham steak, though to my surprise that was a find in the freezer. :p

Now that my patio / grilling area is done I'll be cooking a lot more out there.
