I can understand the Pie update seems like a downgrade to some people. there are a lot of unwanted changes (why'd they move my clock!). but there are a few good things too, and after a few days, you get used to those changes that initially seemed annoying.
on the other hand, if you never take the Pie update, you might never get another security update. or you might end up with two pending updates at the same time where the update process doesn't work right. that doesn't seem like a good long term strategy to me fwiw ( I apologize for the unsolicited advice)
