Every time I take a picture or video my phone saves it to some other app and notifies me when its done. The problem is sometimes its hours after. For example, 2:30 this morning it went off because of a video I took at breakfast yesterday! Same goes for when there's a update for the phone. Mine woke me up at 5:30 a couple days ago because of some software update! I hate losing sleep because of stupid stuff like that. Any suggestions?

I'm fairly positive there is a way to turn it off. We just need to know more about what apps are involved.
Also, what you could do, is just silent the phone during the night.
Under System Settings - My Device , you will find Blocking Mode.
Select it and you will be given options to mute certain activities in certain time brackets. For instance, you can keep calls coming through, while notifications get disabled.

By the way, I suspect the notification is related to AutoBackup Sync feature.
Auto Backup, usually upload your videos and photos to G+ private gallery, when the phone is on Wifi, Charging and Idle. Which would be when you are asleep.
Check under Accounts, if your AutoBackup Sync is checked. You may want to uncheck that.
