No. ViperOne is based on the HTC Sense software.

So, which xposed installer do I download? I intend to use rootcloak

No idea. I don't own an M8, so haven't used Xposed with this ROM. I seem to remember that Jan (ViperOne lead developer) isn't a huge fan of Xposed, probably because they've had cases of Xposed modules conflicting with some of their tweaks, but some people do use it with Viper ROMs.

So, is it safe for me to install xposed-v75-sdk21-arm.zip, a file that I downloaded from xda, through twrp?

Take a nandroid first, then if you have a problem just restore.

Or you could use twrp. It can install the Xposed framework for you.

Hello, I want to use rootcloak since some apps do not support root. To do this, I need xposed installer. Is it safe for me to download the xposed installer apk and install update from there? And run the rootcloak module. Will my phone crash or brick?

And android version 5.0.1

As Hadron points out, Venoms lead dev isn't a fan of exposed as it could cause problems with their modifications. As he also points out, if you have a working Nandroid backup, you'll be fine.
