Could you post again with an explanation of what you are trying to do, and perhaps what phone you have?
The reason I ask is that generally the functionality of an app doesn't depend on the SIM at all. The SIM just enables the network connection (some people store contacts in it still, but hey, it's not the 1990s any more!). Most apps don't care what network you use (many don't care whether you have a network or not), and those which do are mainly those which are using some network-specific function (in which case there's nothing you can do to make it work using a different network). An of course anything which requires you to maintain a single internet session (e.g. an online banking app, or ssh from a terminal emulator) won't survive changing networks. But as I'm not sure what it is you are trying to do, I don't really know whether it's possible or what to advise. So if the question is still relevant, a bit more information would help.
(I'm also guessing that you have a dual-SIM phone, because otherwise changing SIM generally involves rebooting the phone.)
Thanks, and good luck.
