What are your best rated App Organisers.

Personally I want to assign all of my apps to my custom labels/categories and then I want to be able to either have a scrollable dock anywhere on any homescreen (single line) or be able to create a short cut that brings a quick-list up for a specific category.

Ideas people :)
 
I use "apporganizer". You can create your own folders with icons and place them on you home screens. It doesn't have a scrollable dock tray though.
 
Since I wrote that, I've actually been trying out AutoAppOrganiser, which is pretty good. Like the one you're using, you can create shortcuts on your homepage 'PRODUCTIVITY' for example which brings up a quick list of the apps in that category.

Can finally reclaim some real estate lol

This is exactly what I do, to accomplish it you will need Folder Organizer to create the groupings (referred to as labels in FO), and then an alternative launcher with a dock, like Launcher Pro. In Launcher Pro you can assign the shortcuts in the dock to Folder Organizer labels.
 
+1 Auto App Organizer. I had been using Folder Org., but in trying to find apps that use less memory, AAO is 60% smaller, yet does almost the same thing. Folder Org does give you a few more options on how you want the contents for your shortcuts to look.
 
Thanks guys, to make this work just right, can either of you suggest an 'app'/icon pack that gives me a good set of icons, I mean I have a "Travel + Places" group for google maps, directions, foursquare etc... but theres nothing in the icons provided in auto app organiser.

Any ideas? :-)
 
For a folder organiser i use apps organiser: https://market.android.com/details?id=com.google.code.appsorganizer

For icons I use custom launcher icons (formerly launcherpro icons): https://market.android.com/details?id=com.droidicon.launcherproicons. It has hundreds (maybe thousands now) of monochrome icons for every app imaginable, which can then be modified by applying different colours, glows and icon shapes to them.

Alternatively something like simple text can be used to generate custom text based icons: https://market.android.com/details?id=com.redphx.simpletext
