This would be a question better suited for the MyTouch 3G All Things Root subforum. I would recommend your asking it there, where more experienced users can answer the question. I'm very glad that you asked first: many system apps will "self-destruct" the phone if removed. PLEASE make a nandroid backup in Recovery prior to deleting system files! Good luck.
