Help Back Up Question

I have used ADB to backup and restore from my non rooted device multiple times. I have had no issues doing such, but I got to thinking, what if I ran:
Code:
adb backup -apk -shared -all -f C:\Testing\TodaysBackup_09222016.ab
Then I created a zip file and extracted the contents
Code:
java -jar abe.jar unpack TodaysBackup_09222016.ab todaysbackup.tar
tar -xvf backup.tar

Which gave me one folder called apps which contains com.* folders for all of the apps that I had installed. My question being, are these com.* folders just the .apk files unpacked (or unzipped whatever the proper terminology should be) or are these the actual files that hold your save data & progress?

EDIT -->
Just for clarity sake a few of the com.* folder names are
Code:
com.privateinternetaccess.android
com.nitrodesk.touchdownpro
com.serviigo

try anoter backup app. example: twrp, easy backup, titinam bacup etc.

To my knowledge TWRP does not work on the Note Edge (I could be wrong on that). Will TiBu work w/o root privileges?

I am essentially wanting a FULL backup of my device.

TiBu needs root to work so if you're not rooted, it won't.

What are you viewing the folders with? Are these on your PC or phone? If you open the folders, are there apk files in them? If no, can you see anything called manifest.xml?

I thought TiBu did...unfortunately I do not believe there is a way to root the ATT Note Edge

Yes each com.* folder has it's own _manifest that is a "file" data type.

I am viewing the folder contents on my computer after extracting the contents of the .zip file that I created.

If they contain a manifest.xml file, they're most likely the apk files and your computer is displaying them as folder or zip archives (mine does the latter).

If you right click them and select properties, does it say their extension is apk?

This is what it shows when I open it. It is a file called _manifest but it is not a .xml file type it is a type File. If I right click and go to properties it shows the type of file as File. Whereas if I right click on a .vbs file or .xlsx file and go to properties it lists the file type as VBScript or Excel, respectively.
