Hello and welcome to the forums,
Unfortunately, for stock Android messaging, you can't. I'm not sure if that's an option on any of the "skinned" versions (HTC Sense for example). However, have you tried a third party program like Handcent? Programs like that do have the capability you're looking for and a whole lot more.
