Root Backup problem :(

Hi guys I'm new to this whole rooting and flashing thing and just picked up myself a Fascinate. :)

I'm coming from a very not-stock Droid1. I had CM6.0 and 2.2 on it, overclocked on a 7 pin 1.1ghz kernal. (Did I spell that right?) I'm NOT familiar with a lot of this stuff on here, but I definitely know my way around ROM manager.:)
Well rooted my new phone, and it was incredibly easy. Took maybe 5 minutes once I actually pulled the trigger. Installed rom manager and clicked "flash clockworkmod recovery."
But I have found a rom I want to install through ROM manager (Darksy v5.1) but I want to backup my current ROM first so I click "back up current ROM" in rom manager. Well I name the rom and hit ok, the phone restarts and I end up at:

Android System Recovery <2e>

reboot system now
apply sdcard:update.zip
wipe data/factory reset
wipe cache partition

HALP! I dunno what any of this means :( I just want 2.2 for freaking flash and I want to get rid of the bloat ware. Thats why I'm drawn toward Darkys 5.1.

I did do something just after rooting, I think I went into ROM manager and then into JT1134 and tried to download Kernels: Voodoo.... and I think something failed... or I went back to the android system recovery I mentioned earlier.

Also I do NOT know how to get into recovery with the phone off, and would very much like to know.

Sorry for a lengthy first post where I ask so many questions, but I would like anyone's help.;)
