I know the S Note and Action Memo apps have a lot of potential, but I'm having trouble using them to their full potential. Can anyone recommend and creative how-to videos/articles for the either of the two apps. The only videos/articles I've found are to do to basic features like hand write notes, etc.

Becoming proficient w/ S Note & Action Memo Apps

I too have looked for this and really couldn't find anything other than basic tips. What has worked for me is just opening it up and start playing with it. Write something and start selecting options to see what they do.
I am now using these app instead of paper at work and home to take notes or just to write something down that I would normally use paper for.
One thing that I have found that I dislike is when you take a note in S Note and choose to transform it to text (instead of handwriting) when you share it as a PDF whomever receives this needs to download and install the adobe Asian extended Language pack to view it in Adobe. If you view it in Chrome you can see the text without the language pack which I guess is a plus. Have not tested other browsers.

Start a new S Note
Write something down and then choose the cloud looking icon next to the eraser.
Draw a loop around whatever text you want to transform.
Choose transform
Choose Text
There are also other options that you can play with like shape and formula.

I'm enjoying the fun of learning all one can do with the stylus and S-Note. It's an amazing app, Samsung's done a great job.
