When I play podcasts while carrying my cell phone in a pocket, android 11 will open apps or move items around on my home screen. What's the best way to stop this?

On a Samsung phone you can go into settings/home screen/lock home screen layout and tick the the option on. I don't know if that's an android or just a samsung option. The setting is a life saver for listening while on the move with a cell.

Turning the screen off before putting it in your pocket should solve this, unless something turns it on again. Putting it in with the screen facing out should also work, since it won't be rubbing against skin through the lining of your pocket (though it means the screen is more vulnerable to you bumping into things).
One foolproof solution is a flip case: close that, screen covered, nothing can interact with it. I've never had this problem while using one.
