Root [Boost Mobile] backing up to a rom?

I know you can backup with cwm.. but how about making a ROM backup where it backs up *EVERYTHING*? Is this possible with cwm or how would I do this?

CWM backup should save everything, but beta1 version had issues backing-restoring user data. I do not know if beta2 have fixed it.

If still user data issue then you can make a backup with CWM and save all user data with Titanium Backup.

You cannot unbrick any phone if it is actually brick, but if phone is not able to load rom you can get into recovery and restore a previous saved rom (if Restore cannot handle user data then install Titanium Backup and restore saved apps).
