Ok, I just rooted but how would a person go back to stock? I'm not going to stock but just in case I need to.. how would I do so?

why would you want to go back?
Use root explorer to delete su in /system/bin and the super user app in /system/app. Then do a factory reset on the phone.
yes there is a way im doing it right now its called handset software update tool you can find it on zte website and it bassicly puts stock firmware on your phone also the reason someone would want to go back is to take your phone for repair because if your phone is rooted then it voids your warrenty and for my case my cammera wasnt working because of the root
