Hi, welcome to Android Forums.
A stock app is one that came pre-loaded on your device. My HTC One has a stock browser that appears in the app list as 'Internet' with a globe icon. Chrome browser also came pre-loaded and is therefore classed as a stock browser in my case.
Stock apps cannot be uninstalled unless your device is rooted, but you can uninstall any updates that have been applied.
Hope this helps.
