You best bet is to root the Tab using Z4Root and then, use Titanium Backup to "Freeze" the apps. That way, it's like they aren't there but you can easily restore them if an OS update comes along. They have the updates programmed to look to see if all the bloatware is still on you device before they will run. If you've deleted the apps, you can't do the update. By using this strategy, you can easily restore the bloatware using Titanium Backup and do your update. In fact, I had to do this just yesterday for the current update to Froyo. Once you're rooted, there's really no reason to unroot the device unless you're wanting to do an update. All rooting does is give you "Superuser" access to your device. If you don't do anything with that access, you don't really have any concerns about "bricking" your device. Just being able to backup your entire device using Titanium Backup is well worth rooting it. That way, if your device dies, you can easily restore everything on a new one using TB. It rocks!
