Root Cannot Uninstall - I need to root?

Hey guys, I just got my new phone and I would like to mess with it as much as I possibly can, and I cannot uninstall a few apps that came with my phone and I would like to, and to do this I will have to do something called root.

I do not currently have much time on my hands tonight and in the morning to look for information on these. I was wondering if anyone could give me some description of what rooting my phone actually does and a link to something explaining it for my specific phone? (The Samsung Galaxy S2 Skyrocket)

That and if it is truly useful for anything besides freeing up about 200mb worth of space on my phone.

I'd be grateful for any help.

Well debloating is can be a good thing(especially if you're running out of room on the internal SD)

Rooting will let you do things that you could not do before(mainly install 3rd party apps that will let you remove apps you could not before). But you do have to be careful as some apps are linked to others and can cause issues.
