I can't seem to keep Go Launcher and Go Keyboard as my defaults, it works, but I have to turn them on/ switch to them every single time I turn on my phone
You might be having this problem because when your phone starts up it doesn't show apps on the sd card immediately. These two apps must be on the sd card, move them to the phone to keep them as a default.
Do this by going to...
Settings > manage applications > sd card. Click on the app/apps then click move to phone.
