Carrier Firmware

If I have removed my carriers bloatware or flashed a non carrier specific firmware, will flashing back to a stock carrier firmware restore the bloatware back?
 
Hi, need some help with flashing stock firmware
But what's the difference between the two ?
Does this mean that the Carrier branded firmware is going to lock the phone to using only SIM card of that specific carrier ?
Also what happens if I flash a firmware different from what my phone had from factory ?
