How do you change the background colour on a galaxy s3 model GT - I9300 instead of it been black?

Do you mean change the background image on your phone? A long press on your home screen should pop up the options where you can choose your wallpaper from... select a location and, bingo-bongo, you should be able to choose stock images/colours or even your own pictures
