Changing Launcher?

As I'm awaiting the S5 mini I'm just trying to get a head start on the rooting. My S2 was so much better once Rooted I would like to do it again, only I would like to keep the stock ROM. Is it fairly easy to root these things now? My S2 two years ago was sort of a lengthy process.

And I like using Nova Launcher purely for the organization of apps in the "All apps" screen. To all you with S5's, if I switch to Nova Launcher again, will I still be able to perform all the regular homescreen functions that they show on the S5, such as fingerprint scanner, settings button on the home screen, etc.?

Yes. The only thing you lose is the "My Magazine" feature. But Flipboard is better anyway.
 
+1 for Nova Launcher. works well on my Verizon S5. I also use their WidgetLocker app for the lockscreen. Widgetlocker works well, except for Handcent popups, which triggers the original lockscreen.
