Changing phone and keeping apps

I'm still on my first Android, but planning a new one soon.

I have a two part question on the apps I have.
I have both free and paid apps, when I set up the new phone to my Google account, will it automatically add all my apps including the paid ones?
And if it does, will they be the same revision (version number) as I have on my phone now, or the current one on play at the time?

One thing I do want to do with next phone is back up, as updating to new versions of apps that are worse than old drives me mad.
I assume if I back everything up before an update, it's possible to roll back?
Can this only be done on rooted phones or are there utils for non rooted that can do it?
 
Helium can be used to backup unrooted phones. But remember to choose to backup apks, otherwise it won't install the older version.
 
What if I buy a new phone and I don't want it to install my old apps? What if I only want to manually install apps that I want?
Is there a setting for that? I just searched my phone and I don't see any option for automatically installing or not installing apps...
 
When you sign into your Google account/play store for the first time, it asks you to automatically backup/restore apps. You uncheck that box to not let it automatically install previously installed apps.

I don't suppose it's possible to selectively do that, keep some apps, ditch others?

Or is only way (assuming that it is a way) to uninstall on the old phone?

Nope, one way only, either install on setup or not.

Now if you choose to do your own backup, then you can restore which apps you want and which you don't, hope that helps. ;)

well I didn't get that option. the apps just started installing.

anyhoo, interestingly, I found that my version of dolphin that got installed on the brand new phone was v10, exactly same as on the old phone.
 
That's weird it should have gave you the backup/restore option but at least you didn't need to go through the trouble of downloading them one by one.

True. Though what I didn't realise was that I was wasting my time yesterday uninstalling apps I didn't want on the new phone. I didn't realise they would still be on my play account and get installed on the new one. Ihave rectified that now...
This is the first time I've moved from one android to another.
