So what's the difference between Chrome that came on my phone, and Chrome Beta that you can download from the Play Store?

im honestly not sure. i switched to the beta version on my motion and on my nexus and i cant see the difference.

You would have to check out the current change logs as the difference is constantly changing also Google the word beta to get a feel for what exactly that means.
