All I want is to be able to move more apps from phone memory into my SD card and to be able to uninstall some pre-installed apps from my HTC Desire. Where do I begin?
 
Removing system apps doesnt give you more space. If you just want to move more, there is a non-root thread in tips and tricks that may help. Its a sticky about forcing apps to sd, akthough you shouldnt move apps with widgets, UI apps or anything that needs to run on start up.

If you find taht is not enough for you, you should read the memory faq in the sticky thread here, followed by the rooting faq in the same location.
 
Thanks I had tried to do this before but the directions were a bit different. Afterwards I was able to move a couple more apps to my SD, but I suspect they were just apps I had forgotten to move before. With these directions I was able to move a lot more apps to the SD. But is it really true that removing the stock apps won't give me more space on the phone memory?? I wanted to remove Latitude for example, because I found that it's exactly the same thing as Google Maps, which is nicely stored in my SD.
 
Yes its true. The desire is broken into 3 partitionss

/system - Where the rom and "system apps" are
/cache - for downloads
/data - where your user apps are stored.

These partitions are fixed so no matter how much space you make in /system by removing system apps, /data does not grow.

There are ways around this if rooting.
