Help Contact List Problems

I have just purchased a Zenfone 5 for my father who's 70+ years old and this will be his first SmartPhone. I try to establish easiest possible settings for him, but I have two problems about contacts list.

1. Easy mode makes things pretty easy but there is a problem with contacts. I hid the sim card contacts (I mean contacts recorded in the sim card memory) when the easy mode is turned off, so only the ones recorded to the phone memory are shown in the contacts list. However, when you turn the easy mode on, the sim card contacts reappear and there isn't a setting to hide them in easy mode. So, you have to see the sim card contacts on easy mode. I don't want to delete sim card contacts in case of emergencies but how can I hide them in easy mode without deleting them?

2. [This happens whether easy mode is turned on or not] The contacts are normally sorted alphebetically with their names when you enter contacts list from main menu if the related setting is choosen, nice. However, although that setting is the same, when you want to compose a new sms from messages screen or when you want to forward a received sms to another contact, you reach the contacts list from messages menu by pressing a "+" button there. When you do this, the contacts are sorted with their surnames not with their names, weird. Also the sim card contacts are here again. There isn't an option to change this neither in sms settings nor in contacts settings. Annoying. Why would the contacts are shown differently when you access them from the messages menu?

I did all the updates the phone finds from the "system updates" menu. I don't know anything else to do now. All help is appreciated. Thanks in advance.
