Help copy and paste from gmail help

How does one go about doing a copy and paste from gmail? or even the native email app?

Hold you finger over some text until you see to delimiters, move the delimiters to specify the text you want to select, then press the copy icon (2 sheets of paper), once you do that your phone will tell you that the text has been copied to the clipboard.
