Cortana on a note 8 with plantronics headset

Hi,
hoping somebody can help me! I've just moved from w10 to android, but I'm having a huge issue with getting my headset (Plantronics legend) to work with the note 8 correctly.
I've emailed Plantronics too and I'll post any reply here to help anybody else if I get to the bottom of it.

When I used my w10 lumia 950 I could make calls and get messages read out on the headset without touching my phone.
If I pressed a button on the headset and say 'dial bob' or 'dial john' the phone would do this whilst in my pocket. messages would also be read out to whilst the phone was in my pocket.

All the above were done using Cortana (built into w10 as the assistant)

Now if I use google assistant and do the above I have to get the phone out to press call, I'm not lazy, but this defeats the whole idea of being an assistant and hands free. I might as well forget voice dialing if that's the case (not good as that's the whole reason I used to use cortana).

I'm sure I'm missing something here!

I've downloaded Cortana and android will let me set this as the default assistant, but when I press the headset button to say 'dial bob' or 'dial john' the phone goes to another page and asks me to select which app to perform this task.... I only get the option of google or bixby (bixby i will not touch due to wanting everything personal about you, including you inside leg measurement).
This stops Cortana dead in the water, does anybody have a work round or any idea what I have missed?

Really grateful for any ideas and help, I can't go back to w10, but it seems to me Android has blocked a great app and doing so has taken away the true hands free side of a hands free headset.

If you've never used this headset with all these functions it may sound crazy, but trust me the headset is amazing when you have all the functions (just want to get them back!)

Thanks again for reading this and hopefully somebody will have a good answer and not reply with get you phone out of you pocket and forget hands free you lazy git or sod off back to windows phone!!!!

I've notice since moving to Android with the Note8, that my Plantronics headset is nearly useless. When using a Windows phone, my earpiece would tell me that I had a new message and from whom. It would also allow me to respond. IOS was a downgrade in usefulness but I could still tell it to read me new messages. Thus far, I haven't found anything useful with the Plantronics headset and the Note8.
