This might not be what you're looking for, but Nova Launcher (and probably Apex or other launchers) allows reassignment of the home button for those functions (and others). I admit I haven't played with Touchwiz enough (or remember it well enough) to comment on changing it in there, so if that's what you're looking for maybe someone else can chime in.

Press home button twice and Siri...I mean S-voice comes up

They should have at least given her a proper name...Sammy comes to mind. But that would remind me too much of an ex I had named Sami...she was beautiful to look at and man could she ever...um, cook, but she had about the same personality as S-voice but was less smart.

I prefer good old fashioned voice actions and soon to be Google Now. I was hoping to bring that up instead. Not gonna happen without a launched i'd guess
