Is there any way to change what is display when you put your droid into the car dock or media dock?

Short of going into the .apk files themselves and doing some serious editing (good luck with that, I've tried) ... what sublimnl suggested is about the only solution. I created a landscape mode cardock screen that has everything I want on it. But, you have to install and learn Sweeter Home Preview 2 to accomplish this. The good news is, today they just released a new version. Look for the thread in this forum ... I just created it.
