There are many ways to customize a home screen. Simple icon/widget moving is done by long-pressing an icon or widget and dragging or deleting it. You could install an alternate launcher like ADW or Launcher Pro, or you could go to the extreme and root and flash a custom rom.

ok got that. what about customizing individual wallpaper for each of the 7 home screens

I don't know if Sense UI lets you do that. Some of the other launchers will, however. The best answers will come from others with the same phone in the HTC EVO 4G forum.
