How long should it take to for a CWM Recovery image to run? I've never done it on my phone or any other device, and running it on my TP takes like 2 hours to complete.
First I would have to ask if you are running a derivative of cm9 or ICS?
For my touchpad anywhere between 45 minutes to an hour coz the system is quite large. Also as long as you see progress you should just buckle down and leave it to take as long as it needs. 2 hours seems a bit long but again I did not time it the last time I did it and it seem to take a long time.

I don't think there is anyway to speed it up other than clearing up your system a little.
What do you mean by a "recovery image"? Do you mean creating a backup in recovery?
FWIW, TWRP seems to be a bit faster and also creates a smaller backup. The stock install replaces your CWM recovery. I think my backups are closer to 5 minutes.
I had issues with it because I was running the AOPK rom AND wanted to keep CWM and TWRP on my TP.
How big are your backups? You'd have to browse the clockworkmod\backups folder (when plugged into your computer or via an Android app) to check.
My backups created by CWM are about 1 gb each. My TWRP backups are about 650 mb each.
Mine was only 870MB. Ya, I was creating a backup in recovery. It was taking the longest at where it said it was backing up data, and the file names were about 10 characters long and seemed to be random.
Oh well, I'm on CM9 Nightly now, and so far no need for that backup.
There's a setting in Rom Manager to disable the progress indicator, which makes backups a bit faster.
If you're on the nightly channel, you're going to want to create a backup before each update. There's no guarantee the next nightly you install will be a good one.
