How do I disable standard dialer on the Mate 2 and make a downloaded custom dialer my default?

There are several ways...you can open the app you want to be the default dialer via Manage Apps in Settings, and set it as the default there (scroll down the screen to get to the defaults section on the App's page).
Another easy way is to download an app designed to streamline the process for setting app defaults, such as Better Open With - here's a link:
