Does Google map navigation GPS work in tunnel?

No, because the GPS antenna in the device requires a line of sight to the sky to get a signal from the satellites.
Shortly after you enter the tunnel you'll get the "GPS Signal Lost" warning. Once you exit the tunnel it will re-acquire the satellite signal and start working again.
This is true for any GPS device and GPS-dependent app, not just Google and not just phones. The same thing will happen with an old-school standalone nav unit (i.e. Garmin, Tom-Tom).

the new Garmin GPS devices are now incorporating "Dead Reckoning" so that if an exit needs to be taken the instant you come out of a tunnel, they know pretty much where you are....
they do that by "assuming" that you don't change speed, and use "elapsed time" to calculate "where you should be".
My Garmin 2797 does that, I thought it was rather neat the first time I noticed that it was tracking me thru a tunnel
I use CoPilot USA on my cellphone most of the time, but have never had the occasion to try it in a tunnel....

I wouldn't think that's a problem in a tunnel where there aren't any exits until you come out the other end.
You'd still have the route with the next turn/exit indicated from before entering the tunnel and losing the signal.
It may seem incredible now with all these electronic aids we have available, but there was a time when we actually managed to get where we were going with nothing more than our memory and a paper map-

today, I got a good jog of memory cells.
worked outside in the yard for a few hours, came into the house and the INTERNET is dead....
an hour with AT&T gets me an appointment for next Monday to get someone out here to see what is wrong.
My desktop is dead in the water, our laptops can't print to the printer, because it is on a Network Share.... and the ADSL router won't even allow my LAN connection to see the WiFi which still works, simply because the outside world is gone....
so, I turn on Hotspot and use my laptop which has WiFi...
back in 1991, we had dialup 300 baud modems talking to CompuServe.....
in late 1992 something came along called the internet.... and faster BBS services arrived!!!!
somewhere along about '97 or '98 forums evolved..... and Google News hit the streets.....
how did I ever get along without the Internet??? I grew up deprived all my life
had to go fishing, play ball with the neighbor kids, or got a leather belt on the backside because I had not hoed all the weeds out in the tomato patch, and in the grape vineyard..... or, I did not dig up those Mimosa trees for the guy who was coming out this evening and wanted 10 of them to take home and plant.....
I grew up on a "Truck Farm" and if it had roots on it, we had it growing somewhere on the place.
and the "tractor" was a 2 wheel walk behind thing that pulled a single 8" bottom plow, or a 6 bladed single row disks set....
or, a single row of 8 harrow spikes.....

got a giggle today..... I had been to the doctor's office and got my ears punched.
That's a real live fact, they inserted tubes in both ear drums so they can equalize the atmospheric pressure changes..... something about the eustacion tubes are both blocked permanently???
anyway, I had just commented on FB about my new found ability to "hear again", and for some reason, got to wondering how would Google Voice handle a short comment about going home?
"Go Home", um, that brought up a recording by some vocal artist....
"Take Me Home", well now, that brought up a page I have not seen before, but it asked if I wanted directions.
So clicked on that, and it went to Google Navigation Mode instantly.... no mess, no fuss, straight into Nav Mode.
Then, had to stop at the pharmacy and get the meds the doc ordered...

left it in my pocket, walked out to the car, and before I could open the door, it said "Turn right onto......"
