If you really want nothing Google on your phone, buy one that can be easily rooted and has a cyanogenmod ROM available for it, install that and do not install a google apps package (the basic CM ROM does not include Google apps). Make sure your browser does not have Google set as the default search engine. Make sure nobody you know uses GMail, since Google will have access to any mails they send to you or you send to them even if you do not use it yourself. Also make sure that nobody you communicate with has their messages backed-up to the cloud, since if they have then all of your communications with them end up there too - to completely go dark to Google requires more than just you not using their services.
Then use an alternative app store of your choice. Beware of random app download sites though, as they often contain apps that have been infected with malware. Some apps may not be available except through apps stores that you don't want to use: that is the app developer's choice, and in that case you just have to find an alternative app.
As noted above, Google are far from the only company in the tracking business, but for Google specifically that's what I'd do. And of course any online activity you carry out, such as posting here, is being catalogued by Google as well as other search companies. So it's really a matter of how far you want to go, and how little of an online profile you can manage with.
