Everyday my emails disappear and the box is empty? Where do they go and how do I retrieve the older mail items?

You need to change your sync settings within the email app. You probably have them set up to only show e-mail for the last 1 day. There are usually options to increase that to more days, keep a specific number of e-mails or sometimes, keep everything (last one NOT recommended as if, like me, you've had the same e-mail address for 15 or more years, that's a LOT of mail
