Why don't the emojis include an American flag or an emblem from the Army, Navy, Air Force or Marines?

For one thing, I don't think the inventors of emoji (the Japanese) had thought they'd ever need those emblems.

Well emoji does include Old Glory, as it includes every other country's national flag. As for military things for specific countries, probably not and might be considered too contentious.

BTW the US Confederate flag isn't in emoji AFAIK.

The first iterations of emoji, were very Japan specific and parochial. These days of course it's very international, tries to please everyone and hopefully offends nobody.
