how can I remove factory apps from my zte v768????

In most cases you have to root the phone. Then an app like Titanium Backup can remove anything. (Be careful that you don't remove an app the phone needs to keep running.)

As Rukbat said, you have to be rooted (no other possibility with stock Gingerbread on your v768). I would add, rather than remove, you should first try freezing the app(s) in question. This will stop them from running, and allow you to ascertain that there are no negative effects. If all is good, then you can delete to free some space. Titanium Backup also allows you to freeze, once rooted (as does Super Manager).
