Moved to the Galaxy Mini area for you, nateherron. Welcome to the forums. :)

In the Android Market (now "play store") are apps which address the cross-platform tethering issues. I'm not seeing anything specifically targeting the Mini with the iPod, though.

Let's see if any other users of this phone have had the experience you are looking for.
