I installed Google Voice on my Incredible and it works great. It configured my Google Voice mail number as "speed dial #1" as it was suppose to.

My question is can I edit that number? I want to add a pause and then my pin number. I can do it in a different speed dial location, but that uses two of my speed dial numbers for the same Google voice mail. I haven't found a place or a way that will let me edit speed dial #1.

Does anybody know how I could do this?

While this doesn't exactly answer your question, you can achieve the same results you're looking for another way. Go to www.google.com/voice and click Settings, In the Phones tab, select Edit for the phone you want to do this with, show advanced settings, and change Voicemail Access to Yes, Pin not required. Has the same effect in the end.
 
If you installed the google voice app your voicemails can be played through there. ALso the voicemail transcripts with be available there too.
