You are not the only one who wants Ice Cream Sandwich... I think everyone is waiting for it!!
The source code was only released by Google about 6/8 weeks ago... the manufacturers/carriers will need to do their bit (adding their twist to the platform) and it could take them quite a while.
There are custom ROM development teams (like the people who bring out the CyanogenMod ROM's) working on custom versions for phones at the moment... there are a few early beta versions out there at the moment for some phones (to run a custom ROM you need to be rooted).
You would be able to discuss your device in particular in the sub-forum - Samsung Galaxy Ace - Android Forums - other users of your phone will be able to give you advice related to rooting (if you wanted to go down the custom ROM route) and when you are likely to see ICS coming to your device (be that as a custom ROM or as an official update!
