Heat from your phone is usually from the battery rapidly charging or discharging. It's common for a phone to get warm when you have all the features on such as mobile data, wifi, bluetooth and gps. It will also get warm if you have it plugged into a charger that delivers a lot of current. There is circuitry in place in most phones to prevent overheating, so if you phone is getting too hot to touch, the first place I'd look at was the battery.
A faulty battery can be dangerous and possibly catch fire. The next time your phone gets hot, open the back and remove the battery and see if it's the battery itself that is hot. If so, replace it immediately.
If it's the phone, you might have to send it in for repairs or replace it altogether.
Either way, you will be able to get more information from experienced Galaxy S owners in Samsung Galaxy S - Android Forums. Good luck!
