Help Get Square Icons Back

The first thing that comes to mind is a different launcher and different icon packs 
As far as changing the icons on the stock launcher, I'm not sure....I've always used a different launcher

Must be something with particular device, launcher or icon set you're using.
Lollipop 5.1.1 on an Oppo, stock launcher and icon set, nothing much "tiny circular" here.

I cannot reply for some reason so....
The apps all have the regular icons, it is in the contact list where I have the tiny circular icons that are all but useless. Then when you create a shortcut on the home screen for a contact in your list, it uses that same tiny circular icon. I have found no way at all to fix this glaring weakness. I have tried Nova launcher that allows you to change icons but it still turn any icon I select into a tiny round icon.

What phone have you actually got, make and model? Because it sounds like what the particular manufacturer prefers, little round icons. Rather than being a general Android issue. And how the UI looks is the one thing that manufacturers really can change and customize, over what stock Android might look like, because it's part of their branding identity.
My Oppo has big bold square icons with the stock launcher and icon set, which is what they do.

How to change the rounded icon to the square one: Asus Z3580, and perhaps others
You go to the page where all the apps and widgets are shown. Go to the pull down Menu in the right top corner and pull it down. Open Preferences, next Folder Icon, Select Icon Frames, or deselect it.
This changes the Icon appearence between rounded type and square type.
