Root Give me the stock apps

I am new to the Android phone hacking so I might be using the wrong terms here.

I want the stock google apps instead of the samsung tweaked ones and they do not appear to be available on the market so I guess some hacking is needed to get them.

I have rooted the phone, bought titanium backup pro, and froze a bunch of junk. From what I can tell to get the google apps I would need to install a custom rom right? It looks like there are three custom roms now will one of them give me what I want?

I downloaded the files linked in the return to stock thread on this forum is there something else I should do so I can get the phone back to stock in case something goes wrong? Should I be making an image of the phone somehow or is the one linked in the back to stock thread all I need? I don't really care about losing anything of the phone everything is online anyway.

The easiest way to get back to stock now that you are rooted is to do a nandroid backup of your phone through a custom recovery. You should do this before you make any changes to your phone in case something goes wrong.

I have all the crapware frozen with titanium backup should I unfreeze everything before backing it up or doesn't it matter?

Will installing one of the custom roms give me the stock google apps or allow me to install them? Is there some way I can install them without installing a custom rom?

The crapware (bloatware) shouldn't matter for a backup. You may need to unfreeze it to install an OTA. Most roms will offer a gapps download too (this is google apps). Usually you install the rom and then gapps before you reboot.
