If you mean you want to associate your device with a completely new Gmail account, not being linked to your existing one, then you would need to perform a factory reset (you would lose all user data/apps).
If you want to associate the device with a new account then, from your homescreen, head to "settings=>accounts" and add account. Touch the Google logo and input the details of the new account
